Mashed potatoes with tonka beans

Lightly heat the milk with the tonka beans. Cover the milk and let it rest for at least 12 hours in the fridge. Then strain the milk.
Preheat the oven to 160 ° C. Spread the potatoes on a baking tray lined with parchment paper and bake in the centre of the oven for approx. 90 minutes. Halve the potatoes lengthwise and remove them from the peel with a spoon. Mash them with a potato masher or a vegetable mill. Melt the butter in a pan and let it brown slightly. Add the potatoes and milk. With a ladle, mix until a homogeneous puree is obtained. Season with salt and pepper.
